Industry City Distillery is going to revolutionize the distilling process.  Yesterday I toured their facilities and had my mind blown several times.  My favorite: yeast encased in sodium alginate, the same chemical used to make molecular gastronomy “pearls.”  No filtering of yeast after fermentation is required, and the same yeast can be used for up to two months.  Watch their video for more innovations.
